By now, you’ve probably heard of an Aperol Spritz. A sparkling, orange drink that’s long held the summer spritz crown. But this year there’s another serious spritz contender and with Google searches up 100% at the time of writing, it looks set to take the summer by storm - introducing the Limoncello Spritz.

We spoke to the cocktail experts at Bloom in Farnham for their take on the tipple, a Pear & Thyme Limoncello Spritz. Using one of Bloom’s signature shrubs for a harmonious balanced flavour, the pear and thyme complements the sweetness of Limoncello. Here’s how to make it at home:

Bloom’s Pear & Thyme Limoncello Spritz

Ingredients

  • 125ml Prosecco

  • 35ml Limoncello

  • 25ml Pear & thyme shrub

  • Topped with lemonata

Method

  • Add the Prosecco, Limoncello and pear & thyme shrub to a tumbler over crushed ice

  • Top with lemonata

  • Garnish with a sprig of thyme and lemon twist

To make the shrub:

  • Wash 500g pears and thyme then place in a bowl and lightly mash

  • Add 500g caster sugar to the bowl, stir then cover with cling film, leave in the fridge for 48 hours

  • When ready, the fruit will be sitting in a syrup. Filter through a muslim cloth or fine sieve into a sterilised jar

  • Stir 500g cider vinegar into the syrup with a sterilised spoon

  • Seal and leave for 72 hours before use

Tip: You can make it without the shrub by adding 50ml Limoncello instead
